Acclaimed Japanese chef Raita Noda has teamed up with sake master Toshi Maeda to host two interactive food and sake matching dinners this winter. Renowned within Melbourne’s foodie cognoscenti as the sake master, Maeda is on a journey to educate and inspire Australians on the drinkability and different flavour profiles of high-grade Japanese sake. Bringing with him a wealth of sake knowledge and over ten years of experience, this exclusive Ocean Room event will see guests learn about the history, processing procedures and tasting notes from a wide range of premier sake. From the sought after Daiginjo and Ginjo sake range which makes up only 25% of the total sake production in Japan) to a selection of Honjozo, Maeda will offer an impressive insight to this popular Japanese spirit. The sake featured at this event has been carefully chosen to match each offering in Noda’s six-course degustation menu. With a focus on fresh, seasonal produce, the menu has been designed to showcase Ocean Room’s distinctive brand of modern Japanese cuisine and Noda’s culinary flair.
