The Hill Eatery – Farm Gate to Plate
The Hill Eatery on Campbell Parade, North Bondi, hosted an official opening by way of a lunch for invited media, family and friends. The occasion was designed for The Hill Eatery to showcase chef and avid fisherman, Sam Smith’s ( ex Perth’s Balthazar and Duende and Paddington’s L’Etoile) passion for food excellence underpinned by using fresh and ethically sourced produce. Sam explained his philosophy as ‘farm gate to plate’ with the eatery’s organic beef being grown by friends in Scone and The Hill’s fish being caught by Sam’s Dad in Port Lincoln.
The Hill Eatery certainly looked inviting with terrific natural light exposing a restaurant environment which has been designed with great care by the establishment’s architect partner, Michael Benson. Michael incorporated in the fitout, recycled material sourced from local builders including recycled timber from Botany for the floor and tables. MiSociety could well imagine that the restaurant would look extremely pretty when we understand tables are candle lit for evening patrons.
Michael Benson has joined Sam Smith in The Hill Eatery venture along with Sarah Hendriks, Michael’s co-owner of the already well established café, Porch and Parlour, in North Bondi. Sarah provided a ‘Hendriks’ factor for the occasion with her obviously proud parents and grandparents travelling over from their homes in Perth to be present for the opening.
Food media writers can become a bit ‘taste weary’ and ‘restaurant openings jaded’ as a natural by-product of their work but the food served up for lunch was genuinely appreciated by the invited scribes for its freshness and taste quality.
Falafel Salad with Quinoa Tabuli and Tahini Dressing, Old Mans Gully Organic Beef accompanied by root veg, mash and vine tomatoes and the fresh and tasty Grilled Calamari were amongst the dishes that scored very highly.
